About Camillo Donati Il Mio Sauvignon

Although the Sauvignon variety is of French origin, its capacity to adapt has allowed it to be exported to different parts of the world. In Italy, specifically in Parma, a 19th century French count named Brian was a visionary who appreciated the compatibility of the area’s soil and climate with this French variety. So, without thinking twice, he dared to try his luck and planted this vine around his property, in the castle of Felino. It was a daring and successful move because the results were spectacular. Today, following this winemaking legacy, Camillo Donati continues to demonstrate the viticultural virtues hidden beneath the hills of Emilia-Romagna. Of course, always from a natural point of view and maintaining the ancestral traditions.

This is demonstrated in Camillo Donati Il Mio Sauvignon, a sparkling wine made with the Sauvignon Blanc variety, whose vines are cultivated according to organic and biodynamic precepts to maintain the maximum expression of the terroir. Likewise, in the winery the fruit is respected to the maximum and the grapes ferment spontaneously with native yeasts in stainless steel tanks with minimal intervention. The wine is then bottled without fining or filtering and left to undergo a second fermentation according to the ancestral method.

With this Il Mio Sauvignon ("my Sauvignon" in Italian) Camillo Donati makes it clear that this wine is his most personal interpretation of a variety, a place and a way of doing things which is deeply rooted in his land. A most refreshing expression of IGT Emilia.
